Appreciation post: Air fryer zucchini fries turned my snack time around
Honestly, I always passed on zucchini because it tasted bland. Tossing slices in the air fryer with some garlic powder got them crispy and delicious. Now I look forward to eating veggies every day.
Huh. I tried that once and still found them pretty bland. The crispiness was good, I guess, but it didn't fix the zucchini for me. That texture is all it's got going on.
In late summer, farmers market zucchini often tastes a bit sweet. Store bought zucchini is usually picked too soon and kept cold, so it loses flavor. I roast mine with olive oil and smoked paprika instead of frying. The oven heat brings out the sugar, and the smoke adds to the mild taste. I stopped frying zucchini because it never had much flavor. Now I only get it when it's fresh and cook it plain to taste the real thing.
Zucchini can be tricky because it holds so much water... try salting your slices and letting them sit for ten minutes before you cook them. A little grated parmesan mixed into your seasoning makes a huge difference, sticks right to the outside. You gotta keep the slices pretty thin too, or they just steam up inside the crisp shell.
