My wings came out soggy at the Super Bowl party, so I tried the 2 minute trick
I pulled them out of the fryer too early at my buddy Dave's place in Columbus because people were hungry, so I shook the basket and gave them 4 more minutes at 400 and they finally crisped up. Does anyone else pat their wings dry with paper towels first or is that just me?
Paper towels are a must, no question. If the wings are wet when they hit the oil they steam instead of fry and that's how you end up with soggy skin. How long are you letting them sit after you pat them down though? If you dry them and toss them straight in you're still fighting some moisture. Give them 20 or 30 minutes on a rack in the fridge and the skin gets tacky, which is what you want. Also curious if you're dusting them with anything before the fry, a little baking powder in the rub changes the whole game.
