Mortar color shift after a hard freeze in Buffalo

I laid a retaining wall in late October and the mortar went from warm tan to patchy gray by December, turns out I mixed in too much water and the freeze-thaw cycle pulled the fines to the surface, has anyone else seen their joints lighten like that or is it just my mix?
