Found out the health dept counts my walk-in thermometer as the same as my probe, and it cost me a re-inspection
So I failed a health inspection last Thursday over something so dumb I'm still mad about it. The inspector in Fort Worth told me my walk-in thermometer, the dial one bolted to the wall, does not count as a probe thermometer. I had no idea those were two separate things in their eyes. I've been running kitchens for 11 years and always thought one thermometer was enough as long as it worked. She hit me with a re-inspection fee of $175 and a 10 day window to fix it. My line cook had to run to Restaurant Depot mid shift for a $22 digital probe. If you're prepping raw chicken and checking the cooler temp with the same tool you stick in fish, that's a problem for them. Please tell me I'm not the only one who didn't know this. What else are they splitting hairs on that I should fix before my next visit?
