That's a false choice right there. The old crock isn't just about tradition, it's about the material. A good ceramic crock breathes in a way most new plastic lids can't match. But the new station probably gives you better control over temperature, which is huge for consistency. The best results usually come from using the right tool for the job, not picking one side. Sometimes that's the crock for a basic sauerkraut, sometimes you need the tech for something trickier.
