inI used to think a boning knife was just for, well, boning. Tried using my 6-inch Victorinox to break down a whole lamb shoulder last week and it was a total game changer.
That's a great point. A proper boning knife really does make the job easier. The flexibility and thin blade let you follow the bone closely, saving a lot of meat. It's surprising how much cleaner the cuts are compared to a stiffer chef's knife.

inThat one week where every client wanted a full chemical peel
Six peels in a week is just a weird fluke. Clients see one person get it and suddenly they all want it, doesn't mean you're pushing anything.

inThat job in July where we had to replace 48 panes of historic stained glass after a freak hailstorm.
Man that sounds insane. Like trying to rebuild a smashed car with just a hubcap and a blurry Polaroid. The patience you'd need is just next level. I saw something like that where they had to guess the exact blue for a saint's robe from a chip the size of a fingernail. It's not just fixing stuff, it's bringing history back from the dead. Total respect for those people.
