Can we talk about how frozen fries turn out way better after a quick soak in cold water?

I used to just dump frozen fries straight into the air fryer and they'd come out kinda dry and sad. Last week I soaked a batch in cold water for 10 minutes before cooking at 400F and they got so crispy on the outside and fluffy inside. Has anyone else noticed a big difference with this trick?

Not sure it's that deep. I tried the soak method and yeah they were a bit crispier but it's not like some night and day difference. Timing and oil probably matters more than a water bath. Plus it adds a whole extra step and drying time to something that should take five minutes.
