My sister's blunt comment about soggy wings fixed my whole air fryer game
I kept making wings that were crispy outside but kinda rubbery inside. My sister tried one last Tuesday and said 'these taste like they met the fryer but never became friends'. That hit hard. She said I should try drying the wings in the fridge overnight on a rack. I did that with a batch of 12 wings, no oil, just patted dry and left uncovered. Ran them at 380 for 25 minutes, flipped once, and they came out way better. Has anyone else tried the overnight fridge trick or is there a better way to get that texture?
