Spent 2 hours fighting a wheel of brie that wouldn't slice right for my party plate
Last Saturday I had folks coming over at 6 and I figured the cheese board would be the easy part. I pulled a wheel of brie out of the fridge at 4, tried to cut it cold, and the blade just squished it into a pancake. So I panicked and stuck it in the microwave for 20 seconds, which turned the middle into soup while the rind stayed hard as a rock. I tried the dental floss trick next and the floss kept breaking because I was pulling too fast. By 5:30 I had a mangled blob on the board and guests walking up the steps. What finally worked was letting it sit out a full hour, then using a warm knife dipped in hot water between every single cut. Two hours of my life gone over one little wheel of cheese. Now I'm wondering if the floss thing is just a myth people repeat online, or if I was doing it wrong. How do you all cut soft cheese without wrecking it?
