Just hit my 200th sourdough loaf and honestly, I didn't expect to feel this way
I keep a little tally on my phone for every loaf I bake, mostly to track hydration mistakes. Yesterday I noticed the count hit 200, which is around 2 years of weekend baking in my tiny apartment kitchen. What surprised me is that I didn't feel proud, I felt a bit numb about it. The first 50 loaves were chaos, I threw out so many dense bricks I lost track. Somewhere around loaf 120 I stopped checking the crumb with a flashlight and just knew by the feel of the dough. Hitting 200 made me realize I've been chasing the same crust crackle and open crumb for way too long. Has anyone else hit a round number like this and suddenly felt like they need a new challenge, like trying a different flour or a 48 hour ferment?
