Showerthought: I was wrong about preheating the oven for a full 20 minutes
I always thought you had to let the oven preheat for a solid 20 minutes or your bake was doomed, and I did that for probably 6 years. Then a baker friend in Duluth told me most ovens hit temp in about 10 to 12 minutes and the extra wait just dries out the air. I tested it with two batches of chocolate chip cookies, same dough, and the 12 minute batch came out with chewier centers than the 20 minute one. I still give it a couple extra minutes for cakes, but 20 felt like a myth I made up. Has anyone else timed their actual preheat and been surprised by the number?
