Sauce on BBQ feels like cheating to me.
Lots of folks love drenching their meat in sauce, but I think it takes away from the smoke and rub. My go-to is a dry rub with lots of pepper. Anyone else prefer their ribs without sauce?

Bad BBQ's best friend is a thick sauce.

Yeah had some dry ribs last summer and just drowned them in sauce. It works in a pinch, but why not just cook it right the first time, you know?

Thick sauce is just a crime scene cleaner for food. Cover up the evidence, no one has to know.
