Rant: the brick wall at the old train depot in Cheyenne had 3 colors of mortar in one course
Stopped by the old depot in Cheyenne last weekend while visiting my sister and spent 20 minutes staring at the east wall like a weirdo. Somebody patched it at least 3 separate times and each repair used totally different mortar, one grey, one tan, one almost white. The joints were sloppy too, some half full and some smeared way over the face of the brick. My sister thought I was having a medical thing, but I just kept thinking about how fast that job must have been done. Did they use whatever bag was in the truck that day, or was that just how it went back then?
Whatever bag was in the truck that day" is probably closer to the truth than you'd guess, but I'd push back on the idea that it was pure laziness. Back then mortar got mixed on site in small batches, and color varied a lot by sand source, so even the same mix could look different from one day to the next. Sloppy joints bug me too, but some of those old repairs were done fast because the wall needed to get closed up before weather hit. My take is the speed was real but the color mess was more about materials than guys not caring.
