My coworker's $1.50 lentil soup made me drop my meal prep routine
I've been doing the same chicken and rice prep for 2 years, but last Tuesday Sarah brought in this lentil soup she made for like $1.50 a bowl. She said she just tossed in whatever veggies were on sale that week, and it honestly tasted better than my stuff. Anyone else find that switching to something cheaper actually ends up being more interesting? What's your go-to recipe when money's tight but you're bored?
Isnt it funny how a random Tuesday lunch can totally flip your routine? I had something like that happen with chili, of all things. I used to buy the fancy ground turkey and measure out spices like a scientist, then my neighbor gave me a tub of hers made with cheap sausage and a can of rotel and it blew mine out of the water. Now I just brown whatever meat is marked down, dump in a jar of salsa, two cans of beans, and a bag of frozen corn, and it costs me maybe four bucks for a whole pot. The weird part is I look forward to it way more than I ever did the fancy version. So what veggies did Sarah toss in hers, because I might steal that whole idea.
