My fix for slow chicken thigh deboning that saved my sanity
I was always behind on chicken thigh orders because boning them took forever. I saw an old-timer at a shop use a swift flick of the wrist to pop the bone out. Tried mimicking it and after some practice, it's way faster. No more backed-up orders, lol. It's all about the angle and how you use the knife, I guess.

Nah I kinda disagree, some of those old tricks are just showy. For me it was more about getting a sharper knife and going slower until my hands remembered the spots. Different things click for different people lol.

Yeah that part about the subtle angle is so true. It's not just about speed, it's about the way the knife moves with the bone. I get what @mason765 is saying about a sharp knife, but the flick is what makes it clean. Once you feel that pop you can't go back to just cutting. It turns a chore into something that actually feels good to do right.
