PSA: The old diner in Gary, Indiana still hand-cuts fries and it shows
Watched a cook there drop a whole potato through a wall mounted cutter in about 3 seconds flat, no measuring, no machine, and it made me realize how many kitchens I've worked in would've called that too slow.

That kind of speed only comes from decades of doing it, and most kitchens today would rather buy frozen than train someone that long.
