Took me 3 hours to fix a simple mayo emulsion last Saturday

Was making a garlic aioli for a special at our brunch service and it broke twice in a row. I kept adding more oil like an idiot. Turns out my immersion blender was overheating from running it too long. Had to stop and let it cool down for 20 minutes before it worked. Anyone else had equipment screw up a basic technique like that?

Wait, your immersion blender got hot enough to need a cooldown break? I didn't even know that could happen to those things.

Oh yeah, trust me, they can get hot! But actually, it's usually not the immersion blender itself that overheats, it's the motor in the handle. I had mine running for like 10 minutes straight once trying to smooth out a big pot of soup and it started smelling weird. Had to let it sit for a good 15 minutes before I could use it again without worrying. Most of them have a little thermal cutoff switch inside that just kicks in when you push them too hard.
