Shoutout to the guy who explained bloom times at my local shop

Last Tuesday I was at Brew & Grind downtown and this older guy noticed I dumped water on fresh grounds and let it sit. He said I should wait 30 seconds before pouring the rest. Tried it that morning with my V60 and the taste was way cleaner. Anyone else pick up little tricks from strangers at cafes?

Actually I've tried both ways and honestly I find the 30 second bloom makes it taste a bit sour and hollow. I just pour slow and steady from the start and get a fuller cup.

Yeah I get what you're saying about that sour taste. I had the same issue for a while until I tried switching up my water temp. I was blooming with water that was too hot and it was pulling out all that acidity before the rest of the pour even started. Once I dropped my bloom temp to like 195 and then used 205 for the main pour it smoothed everything out. The bloom still works for me but only if I keep it short like 15-20 seconds max instead of a full 30. That little change made a huge difference in getting that balanced cup without the hollowness you mentioned lol.
