That little coffee cart in Portland changed my pour over game

I was in Portland last month for a work trip and stumbled on this tiny cart near the waterfront called something like Brew & Go. The barista, this older guy with a gray beard, asked if I wanted my usual and then just started talking about water temperature like it was gossip. He let me taste the same beans brewed at 92 vs 96 degrees and the difference was wild, one was flat and the other had this berry sweetness. I went home and tried it on my own kettle and honestly my mornings feel broken now. Has anyone else had a random stranger totally reset their coffee standards?
