Just changed my mind about needing a local SIM card in every new country

I landed in Bangkok last month and spent almost 3 full days trying to get a local number, dealing with paperwork and shops that kept closing early. I finally just got an eSIM from Airalo for $12 and had data in 5 minutes. How do you all handle phone service when you bounce around so much?

Local SIMs are way cheaper for long stays though.

But how long does it take to get one set up?
