Vent: my mom's leftovers rule made me a better cook but she was wrong
She always said NEVER freeze rice, claimed it turns to mush every time. I followed that for like 5 years until a buddy at work in Austin told me to spread it flat on a sheet pan before freezing. Now I do that with every batch and honestly it's better than the fresh stuff half the time. Anyone else get stuck on a food rule that ended up being total garbage or is my mom just a control freak?

Did you ever catch that episode of America's Test Kitchen where they tested frozen rice? They basically said the same thing your coworker told you, the sheet pan trick and all. I remember reading a food science blog that said the real problem is moisture and slow freezing, so if you chill it fast and thin, the ice crystals don't wreck the texture. My own mother swore by never washing mushrooms, said they soak up water like sponges. Turns out that's mostly bunk too, a quick rinse is fine if you dry them off. It's wild how these food myths just get passed down like absolute law. You ever call your mom out on a rule she swore by?
