Finally figured out why my cheap drip coffee was always bitter

I stumbled on a video from some chemistry nerd that said water temp over 205F extracts bitter compounds faster, and my Mr. Coffee runs at like 210F. Now I just wait 30 seconds after the kettle boils and the difference is huge, anyone else try lowering their brew temp?

Man that makes total sense actually. I always thought my Mr. Coffee was just cheap junk but maybe the heat is the real problem. Gonna try letting my water sit for a bit tomorrow morning and see if it helps.

Maybe it's just me but this kinda reminds me of how we rush everything these days. Letting coffee stuff settle before brewing is like that whole slow down and let things work thing, @gavin_allen48.
