My uncle swore by a pinch of salt in cheap drip coffee
So my uncle Jim visited last month and watched me make my usual Folgers in a Mr. Coffee. He grabbed the salt shaker and put maybe a quarter teaspoon into the grounds before brewing. I thought he was messing with me, but I tried it the next morning and the bitterness was just gone. Has anyone else tried this or am I late to the party?

Tried this last year with some cheap diner coffee and it really did cut the bitter edge. Just a tiny pinch in the grounds works wonders.

Oh wow, I actually just read about this from some old coffee book I found at a thrift store (I know, random right?). It said salt blocks the bitter taste receptors on your tongue, so it tricks your brain into thinking the coffee is smoother. But the book also warned not to use too much or it gets weirdly salty, which sounds awful. I've been too scared to try it myself, but your success story might make me give it a shot with my grocery store brand.
