Update: My aunt's potato salad at the 4th of July picnic in Dayton made me switch from mayo to sour cream.

I saw her mix in a full 16-ounce tub of sour cream with the warm potatoes, and it soaked in way better, so has anyone else got a mayo substitute that actually works?

Hold up, that's a great tip but you gotta let those potatoes cool first. Mixing sour cream into warm potatoes can make it separate and get kinda greasy. The texture goes all wrong. Let them cool down to at least room temp, then the sour cream stays creamy and perfect. Your aunt might be onto something with the switch though.

Wait, does that mean you should cool the whole potato mash before adding ANY dairy? Because I've seen recipes that say to mix in butter while it's hot, but hold the milk or cream until later. Is that the same idea, or are we talking about a total cool down?
