How my aunt's lost maple taffy recipe surprised everyone at a gathering

I found her old note for maple taffy stuffed in a cookbook, but her writing was really hard to read. I tried to make it for a friend's cozy winter get-together last week. I mixed up the sugar amount and it came out crazy sweet, like syrup on steroids. People tasted it and their eyes got wide, but then we stirred in extra cream and it fixed the whole thing. My friend's little boy loved it so much he asked if we could make it again. I cleaned up the recipe so it's easy to follow now. It's a small win to keep this family sweet from fading away.

It's just candy, not a family heirloom.

Traditional maple taffy recipes often skip added sugar, relying on the syrup's natural sweetness. Your adjustment with cream was a clever solution.

Check the science behind cream in candy making. It interferes with crystallization for a smoother product. Ever wonder if that's the secret to perfect taffy?
