Tried to make a simple bread loaf last week and my kitchen looked like a flour bomb went off

I was feeling ambitious last Tuesday, so I pulled out my grandma's old recipe for basic white bread. I followed every step, but I guess I added too much water because the dough turned into this sticky puddle that wouldn't hold any shape. Then I tried to patch it with more flour, but it just made a huge mess all over the counter and my shirt. I finally shoved it in the oven anyway, and 45 minutes later I pulled out this flat, rock-hard disc that could probably break a window. Has anyone else had a bread project go completely sideways like that?

Wait, are you sure you're following the recipe exactly as it's written? I've been baking bread for years and a lot of times people blame the recipe when it's really just a small mistake in measuring or technique. Water amounts can be tricky but if you added too much, that's a big red flag right there. Did you actually weigh your flour or just scoop it out of the bag? Scooping packs it down and throws off everything. I'd say try again but use a kitchen scale and go slow with the water next time.
