Cold cheese on a hot plate beats room temp cheese on a cold plate every single time
I served the same sharp cheddar and gouda two ways at my place in Austin last week and the difference was not even close. First plate sat out on the counter for 30 minutes, second plate I sliced straight from the fridge and put on a plate I warmed in the oven for 5 minutes at 200F. The warm plate cheese got soft and buttery in like 90 seconds and the cold plate stuff was just stiff and sweaty. Room temp cheese on a cold plate is a losing combo, you lose all the good fats that way. If you have never tried warming your plate first, do it once and tell me I am wrong.
