Blew $200 on a stand mixer bread hook attachment and my $12 dough whisk does the same job
I bake sourdough at home about 3 times a week and kept reading that a stand mixer would save me time on kneading. So I dropped $200 on a dough hook attachment for my KitchenAid last fall. Used it maybe 5 times and every single loaf came out dense and weird. The hook just spins the dough around the bowl without really developing gluten the way my hands do. Meanwhile my $12 dough whisk from the restaurant supply store on Grand Ave does a better job in the first mix. I ended up going back to folding by hand and my crumb finally opened up again. That $200 could have bought me 40 pounds of good bread flour. Anyone else find their fancy mixer gathering dust while the cheap tools do the real work?
