The before and after of my sourdough starter from week 1 to week 6 is wild

My first loaf looked like a hockey puck that a dog chewed on, but after feeding it twice a day for six weeks I finally got a nice open crumb and a real ear. Has anyone else had a starter that just refused to cooperate until suddenly it clicked?

Right on, that starter sounds like it went from 'science experiment gone wrong' to 'actual baking magic' pretty quick. Six weeks of twice-a-day feeding though? You're more patient than me, I'd have probably tossed it in the trash and blamed the dog. Maybe the starter just needed to hit its rebellious teenager phase before it finally behaved. Glad it worked out for you in the end though, nothing ruins a weekend like a flat, dense loaf.

My sister's starter got moldy after she left it in the fridge for three months and she just scraped it off and kept going.
