Oh man, I have to say something here. Portland bakery owners are a whole different breed, they're NOTORIOUSLY picky about carrot cake. But honestly, a lot of them get the recipe WRONG - they add too much pineapple or coconut and it becomes this wet, soggy mess. Your grandma probably used the old school method with oil instead of butter which gives it that PERFECT crumb. Just saying, homemade recipes from grandmas have been tested for DECADES, so that bakery owner probably doesn't know what real carrot cake tastes like. I'd trust your grandma's recipe over any trendy bakery any day.
