Appreciation post: my first decent sourdough loaf after 8 tries
I started baking in January with a starter named Betty, and every loaf came out like a hockey puck until this Tuesday... Finally got a nice rise and a crackly crust. Anybody else have a recipe that just clicked after a bunch of fails?

Ngl, eight tries is some serious dedication, I was ready to quit after my fourth failed loaf. Glad Betty finally came through for you with that crackly crust.

Eight tries is a LOT but honestly that's how long it took me to get my first good loaf too! The trick I learned the hard way was that you gotta weigh your water instead of measuring it by volume. It changes EVERYTHING. Also, don't skip the steam step, I put a pan of water on the bottom rack when I preheat and it makes that crust crackle like crazy. And let your dough rest longer than you think, like 20 minutes at least after shaping. Once you get that first perfect crust you'll be hooked for life.
