How a rushed bake changed my view on dough chilling
I always heard that chilling cookie dough is essential for good results, so I did it for years. But my cookies often came out too dense. One day, I baked a batch right after mixing because I was short on time, and they turned out perfectly crisp and chewy. Now I think chilling can be skipped for some recipes. Have you ever tried baking without chilling?
Yeah skipping the chill like @the_keith said is totally the move. I was the guy who chilled everything for the full time, thought it made a real difference. Then I got in a rush one day and just skipped it, and the result was basically the same. Changed my whole view, now I never bother with that extra wait unless a recipe really needs it for some reason.
