Update: My neighbor's 'secret ingredient' for brownies was a complete disaster

I was chatting with my neighbor, Frank, over the fence last week and he swore his brownies were amazing because he adds a cup of mayonnaise. I tried it yesterday, figuring maybe it adds moisture. The result was a greasy, weirdly savory pan of sadness that I had to toss. In my experience, sometimes the classics are classics for a reason. Has anyone else been led astray by a well-meaning but terrible baking tip?

Frank definitely gave you a bad ratio. A whole cup is insane. I use a heaping tablespoon per box mix, just to make them a bit richer. It works, but you have to treat it like a small boost, not a main ingredient.

Hold on now, you might have just messed up the recipe. A whole cup? That's way too much. You only need like a third of a cup to replace the oil and eggs. My grandma swore by a scoop of mayo in her chocolate cake, and it was always super moist, not greasy. I bet Frank just gave you a bad amount. Don't write off the idea completely because of one botched batch.
