I always thought parchment paper was one of those things people buy to feel fancy, like a $9 jar of flaky salt. My mom kept a roll in her drawer in Boise and I used to give her a hard time about it, said a plain sheet pan and a little butter never did me wrong. Then I tried to bake a batch of brown sugar cookies on her old pan and the bottoms welded themselves to the metal. Half of them came up in pieces and I spent 25 minutes scrubbing burned sugar with a butter knife. She handed me a sheet of parchment and told me to try again. Oh man, same struggle over here! I read somewhere that parchment is good up to like 425 degrees, so now I quit guessing and just toss a sheet down for anything that goes in the oven. My sister kept telling me for years that sheet pans are basically disposable and you should just let them get gross, which sounded like quitter talk until I baked salmon on hers.
