Had to pick between a offset smoker and a pellet grill after my old one rusted through

Went with the offset because I figured real fire management beats convenience, but now I'm 6 hours in and still fighting temp swings on this brisket like a rookie. Anyone else regret ditching the easy button for pride?

The thing nobody talks about is that pellet grills actually give you a different kind of smoke flavor, not just less of it. People think offset is automatically better but that thin blue smoke from pellets can be really clean and tasty on shorter cooks. You might actually miss that smoother taste on stuff like chicken or pork butt where you don't need heavy smoke. Don't let the purists convince you your brisket is ruined by temp swings, just chase that sweet spot and you'll get there. Keep a log of where your fire sits when it holds steady and you'll crack the code faster than you think.

Gotta agree with @henderson.mila here. My buddy spent a year chasing offset perfection and all he got was a hangover and a mountain of burnt logs. Sometimes you just want to eat at a reasonable hour, you know?
