Oh totally, I read something about that once. It said bitter things can kind of cut through all the rich, fatty flavors in savory food and make them stand out more. Like, it doesn't just add its own taste, it wakes up your whole mouth. So a tiny bit of dark chocolate in chili or coffee in a rub makes the meat taste meatier. I mean, it sounds weird but it really works.
