I just crossed 50 briskets in 14 months, and here's the part nobody tells you
Hit my 50th brisket last Sunday on a 22 inch Weber kettle in my backyard in Tulsa. That's 50 briskets in 14 months, which sounds like a lot but really it's just one every week or so. The surprise was the 3rd one I did back in February, it came out so dry I almost quit. But after brisket number 27 I finally got the stall timing down and now every single one lands between 195 and 203 internal temp. The thing that actually mattered was tracking my fire management, not the meat itself, because my charcoal burns way different in humid weather. Has anyone else hit a weird milestone like that where the number itself made you realize you were doing something right? What was yours, brisket or otherwise?
Wait till you hit 200 and realize nobody in your family cares about the difference between a good brisket and a great one. I mean, tracking fire management is solid, but calling 50 briskets a milestone feels like patting yourself on the back for doing the same thing a bunch of times. idk, maybe the real milestone is when you stop counting.
