My uncle's 20 minute brisket rule cost me a whole packer last Sunday
Tbh, my uncle swore you should never peek at the smoker for the first 20 minutes, so I left my WSM alone and trusted it. Came back at the 4 hour mark to find the temp spiked to 310 because the vents were stuck open, dried out the whole flat. Has anyone else had a family 'rule' that just wrecked a cook?
Family "rules" are basically just shortcuts someone made up once and then nobody ever questioned again. Every family has em, whether it's about brisket or anything else. The real lesson isn't about the 20 minute rule, it's that you gotta check your equipment BEFORE you trust any tradition. That stuck vent woulda ruined that packer no matter what rule you followed. People love to blame the superstition when the actual problem is they skipped the boring stuff like a simple temp check. Next time I'd just do a quick glance at your vents right after you light it, then follow whatever rule you want. That way you keep the family tradition but also keep your meat.
