I used to just dump all my veggies in one pot for soup
I always thought tossing carrots, celery, and onions in at the same time was fine until I tried staggering them last month after a friend said it changes the texture. Now I add the carrots first, then the celery 10 minutes later, and the onions near the end. Anyone else notice a big difference with timing your soup veggies?

Yeah the onions thing threw me off too. I used to just dump everything in together and call it good. But now I do something similar where I saute the carrots and celery in the pot first with a little oil before adding broth. That extra step of cooking them alone for a few minutes really brings out the sweetness. Then I add the potatoes and carrots and let them go for a while before the onions go in last. The onions practically melt into the broth that way instead of turning into mushy strings.

@henry_webb68 I totally get that onion thing! My grandmother used to throw onions in right at the start and they'd turn into these sad little gray pieces. Last week I tried your trick of sauteing the carrots and celery first and it really does make a difference. Now I'm almost afraid to change anything else for fear of ruining my soup flow.
