Bought a 'pro' knife sharpener online, it ruined my boning blade
Saw an ad for this electric sharpener that promised a perfect edge in 30 seconds, cost me $150. Tried it on my main boning knife, the motor was way too strong and took off way too much metal, basically ground a new bevel. The edge is super thin now and chips if I look at it wrong. Anyone know a good way to fix this or should I just cut my losses and get a new blade?

Sounds like that sharpener was trying to make a fillet knife out of your boning knife... I'd be so mad. Those things are basically just angry little belt sanders for your tools. Might be time to find a real person with a whetstone who knows what they're doing, but that edge sounds pretty far gone.

Yeah, "angry little belt sanders" is the perfect way to put it. I saw a video where a guy compared edges from a belt machine to a hand-sharpened one, and the hand work was just cleaner. It really does seem like that aggressive grinding ruins the temper if you're not careful.

But is the temper thing really that big a deal for most people? I've used belt sharpened knives for years and they still cut fine. It feels like a problem that only matters to pros or hardcore hobbyists.
