Overheard a line cook say something that stuck with me all week
Tuesday night during service I heard one of my line guys tell the new prep kid, "Don't fry the fear, fry the fish." He meant stop second guessing the fire and just commit. It got me thinking about how many times I've held back on a plate because I was scared of the critique. Last Saturday I finally pushed a special out that I'd been nervous about, a smoked pork belly with a pickled peach puree, and it sold out by 8pm. Has anyone else had a random kitchen comment that actually shifted how they cook or lead?
Fear keeps you sharp. That special sold out because you were scared. Scared means you checked the pork belly three times. Scared means you tasted the puree twice. The day you stop second guessing is the day you send out something half done. I've seen more bad plates from confident cooks than nervous ones.
