Rant: My old kitchen used a $30 plastic mandoline, the new one has a proper Benriner

The difference in prep time and consistent cuts for a 50lb bag of potatoes is night and day, and I'm not going back. Anyone else have a tool upgrade that felt like a total game changer?

A good knife, hands down.

Hard disagree. A cheap knife you don't mind ruining is way more useful. You can hack through bones, pry things open, and toss it in the dishwasher without a care. A fancy knife just makes you nervous.

What are you cutting that needs to pry things open? A knife is for cutting. If you're worried about ruining it, you're using it wrong. A sharp, well-made knife is safer and does the job better every single time. Emery_lane gets it. A cheap knife that can't hold an edge is just a frustrating piece of metal.
