The broiler at my old spot did 400 covers a night, this new one chokes at 80
I moved from a busy joint in Portland to a quiet place outside Boise, and the difference in the broiler section is night and day. Same model, same setup, but the old one I could slam a dozen salmon under without flinching. Here, I hit the broiler with 4 steaks at 6:45 pm and the flame drops, everything stalls, and tickets pile up. Is it the gas line pressure or the way this kitchen vents, or did I just get used to a place that never had these problems?
Have you checked the gas meter size or the regulator on the new spot? Sometimes it's not the broiler itself, it's the supply line that can't keep up during a rush.
