My friend Dave went to a pop-up in Bushwick last month. He saw squid ink pasta on three different menus. All of them used the same jarred brand of squid ink, not fresh. The jars were just sitting out on the counter, same black label. He asked one of the chefs and got a shrug. Said the distributor must have made a deal or something.

Three out of four pop-ups I hit in Williamsburg last month were using different brands of fish sauce, so this might just be your one spot. Maybe that particular brand sponsored the event or had a distributor pushing it hard that week. Not every trend turns into a rule, you know?
