Why does nobody talk about the vinegar smell in the walk-in after service
My old sous from back in the day came through town for one dinner and pointed out that we were scrubbing the shelves with the same rag we used on the flat top, which is why everything near the door picked up that sour funk. Anyone else got a cheap fix for keeping the walk-in smelling like nothing at all?
The rag thing is so real it hurts. We had the same issue and it turned out the sour smell was coming from the mop head we left soaking in the bucket overnight, like that thing was basically brewing its own vinegar. Once we started hanging it to dry and swapping rags between stations, the funk near the door went away in like two days. Cheap fix that actually worked was leaving a small tray of baking soda on the top shelf, changed it out every week or so.
