Appreciation post: my cloud kitchen ticket times dropped from 22 minutes to 9 after I stopped pre-bagging fries
For about 4 months I was pre-scooping fries into paper bags during the dinner rush to save time, but they kept getting soggy and I was eating 1-star reviews about cold food. Switched to bagging them right when the order comes off the pass and my average ticket time went from 22 minutes down to 9 in 3 weeks, has anyone else had to un-do a "time saver" that was actually hurting them?
