Can we talk about the 8oz deli containers I almost didn't buy for my sauce prep?
Two years back I was sure those little 8oz deli cups were a waste and kept ladling sauce straight from a big pot into to-go ramekins, which spilled on half my dasher bags out of my Oak Park setup. Last spring I finally caved and bought a sleeve of 250 for $22, and now I portion every batch of chili crisp and garlic aioli the night before. My remake rate on saucy orders dropped from about 6 a week to under 1, mostly because the lids seal flat and nothing leaks in the hot bag. I'm not saying they solve everything, but my Friday numbers looked good enough that I bought a second case. What small prep change actually moved the needle on your leak complaints?
