Vent: my tamper proof bags kept popping open in the heat and it took me 9 days to fix it
Everybody says just double seal your bags and you're fine. I ran a burger setup out of my garage in Fresno and did exactly that, and I still had about 14 out of 60 orders show up with grease all over the outside of the bag by the time they hit the door.
What actually fixed it was switching to a wider bag with a flat bottom so the food sat down instead of sliding into the seal, plus taping the seam from the outside with that 2 inch food tape. Took me 9 days of messing with seal times, bag sizes and where I placed the food to figure that out. The double seal was never the real problem.
So if you're starting out, just watch where the weight sits in the bag before you blame your sealer. Curious if anyone else has a trick for keeping the seam clear when the order is heavy.
Check the temp of your food before it goes in the bag. Steam softens the seam glue and the plastic gets weak right where the seal is, so even a good seal gives out once the bag sits in a hot car. Letting burgers rest a minute or two on the rack before bagging made a bigger difference for me than any tape or seal setting. Hot grease plus hot steam is what actually pops those seams.
