Wrote off the $45 pour over setup for 2 years, then my sister in Austin made me a cup that changed my mind
I always figured my drip machine made coffee that was good enough, so spending $45 on a V60 and a gooseneck kettle felt like throwing money at a hobby I did not need. My sister in Austin made me a cup with hers last month and I could actually taste the difference, the same beans I use at home came out sweeter and way less bitter. So is the whole pour over thing legit for you guys or did I just get lucky with one good cup, because I am still not sure if it was the method or the fresh beans she used.

Fresh beans can make a huge difference on their own, so it's fair to wonder how much of that cup was the V60. But pour over does give you more control over how the water hits the grounds, and that's where the less bitter part comes from, since you're not just dumping hot water over everything at once. Try it with the same beans you use at home and see if the taste holds up.
