The old greenhouse in Lancaster changed how I dry herbs
Stopped by a restored Victorian greenhouse outside Lancaster last month and the caretaker showed me they hang herbs upside down in paper bags, not in bundles out in the open. She said the bags catch the seeds and keep dust off, which I never thought about. Tried it at home with my sage and thyme, and the flavor is way stronger after two weeks. Has anyone else switched to the bag method, or do you swear by something else for drying?
My friend tried this exact method with her oregano and she could NOT stop talking about how much cleaner the dried leaves looked. She used to lose half her harvest to seeds scattering everywhere, but the bags caught every single one. Now she won't dry anything any other way, and honestly her pasta sauce has never tasted better.
